Upgraded Chicken Tenders

Ingredients

  • 1 package (14 oz.) chicken tenders (not breaded)
  • 1/4 teaspoon salt, 1/4 cup all-purpose flour
  • 1 egg
  • 1/4 cup porter style beer
  • 1 bag finely crushed Food Should Taste Good Sweet Potato Chips
  • 1/2 cup BBQ sauce
  • 1 teaspoon Sriracha sauce

Steps

  1. Heat oven to 375°F. Spray bottom of foil-lined 15x10x1-inch pan with cooking spray.
  2. Season chicken with salt. Place flour in shallow dish. In small bowl, beat egg and 1 tablespoon of the beer with whisk. Place crushed chips in another shallow dish. Coat chicken with flour; dip into egg mixture, then coat with chips.
  3. Place in pan. Bake 12 to 15 minutes or until chicken is no longer pink in center (at least 165°F).
  4. Meanwhile, in small bowl, mix remaining 3 tablespoons beer, the BBQ sauce and Sriracha sauce. Serve tenders warm with sauce for dipping.
