Ingredients
- 4 cups Food Should Taste Good Multigrain Tortilla Chips
- 4 eggs
- 1/4 cup milk
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1 1/4 cups grated cheddar cheese
- 1 cup black beans, drained and rinsed
- 3/4 cup chopped cherry tomatoes
- 1/3 cup chopped red peppers
- 1/4 cup minced green onions
- 2 tablespoons minced fresh cilantro
- 1 avocado, sliced or diced
- sour cream and salsa for serving
Steps
- Preheat oven to low broil.
- Place about 2 cups of chips in a cast-iron skillet or on a baking sheet, then sprinkle with 1/2 cup black beans and 1/2 cup cheese and set aside.,
- In a bowl, whisk together eggs, milk, red pepper flakes and salt.
- Heat a separate non-stick skillet over medium heat and add egg mixture.
- Let eggs sit undisturbed until they start to set around the edges, about 2 minutes.
- Using a rubber spatula, push the eggs from the edges into the center. Continue until eggs are just set.
- Remove the pan from the heat.
- Put cast iron skillet in preheated oven for 2 minutes, until cheese is just melted.
- Remove and sprinkle with half of eggs, then top with additional layer of chips.
- Top with remaining eggs, beans, tomatoes, red peppers and finally cheese.
- Put back in oven for another 3 minutes, until cheese is melted.
- Garnish with green onions, cilantro and avocado.
- Serve with sour cream and salsa if desired.
