Easy Skillet Breakfast Nachos

Ingredients

  • 4 cups Food Should Taste Good Multigrain Tortilla Chips
  • 4 eggs
  • 1/4 cup milk
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 1/4 cups grated cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 3/4 cup chopped cherry tomatoes
  • 1/3 cup chopped red peppers
  • 1/4 cup minced green onions
  • 2 tablespoons minced fresh cilantro
  • 1 avocado, sliced or diced
  • sour cream and salsa for serving

Steps

  1. Preheat oven to low broil.
  2. Place about 2 cups of chips in a cast-iron skillet or on a baking sheet, then sprinkle with 1/2 cup black beans and 1/2 cup cheese and set aside.,
  3. In a bowl, whisk together eggs, milk, red pepper flakes and salt.
  4. Heat a separate non-stick skillet over medium heat and add egg mixture.
  5. Let eggs sit undisturbed until they start to set around the edges, about 2 minutes.
  6. Using a rubber spatula, push the eggs from the edges into the center. Continue until eggs are just set.
  7. Remove the pan from the heat.
  8. Put cast iron skillet in preheated oven for 2 minutes, until cheese is just melted.
  9. Remove and sprinkle with half of eggs, then top with additional layer of chips.
  10. Top with remaining eggs, beans, tomatoes, red peppers and finally cheese.
  11. Put back in oven for another 3 minutes, until cheese is melted.
  12. Garnish with green onions, cilantro and avocado.
  13. Serve with sour cream and salsa if desired.
