Jerk Shrimp & Spicy Sweet Potato Nachos

Ingredients

For the sweet potatoes:

  • 1 Large Sweet Potato, peeled & diced
  • 2 Teaspoon Olive Oil
  • 1 Teaspoon Jerk Seasoning
  • 1/2 Teaspoon Chili Powder

For the Jerk Shrimp:

  • 3/4 Pound Shrimp, peeled & deveined
  • 1 Tablespoon Jerk Seasoning

For the Nachos:

  • 1 Bag Food Should Taste Good Sweet Potato Tortilla Chips
  • 1 Can (15 Ounces) Black Beans, drained & rinsed
  • 1/8 Cup Green Onions, chopped
  • 1/8 Cup Red Onion, chopped

Steps

  1. Preheat oven to 425 degrees
  2. Toss the chopped sweet potato with the oil, chili powder and Jerk seasoning.
  3. Place on a medium size baking sheet in a single layer.
  4. Roast for 30 minutes, turning occasionally.
  5. Heat a large skillet to medium heat and spray with cooking oil.
  6. Toss shrimp with Jerk seasoning and cook for 3-4 minutes on each side until shrimp is pink and cooked through.
  7. To assemble the nachos: Place the sweet potato tortilla chips in a single layer on a large baking sheet, top with roasted sweet potatoes, black beans, shrimp, onions and cheese.
  8. Broil on low for approximately one minute until cheese is melted.
