Ingredients
- 8 oz. cream cheese, cubed
- 3/4 cup pilsner beer*
- 1 cup (4 oz.) shredded Cheddar cheese
- 1 cup (4 oz.) shredded Monterey Jack cheese
- 1 can (14.5 oz.) fire roasted diced tomatoes, drained
- 2 tablespoons chopped chipotle chiles in adobo sauce**
- 2 tablespoons chopped green onions
- Food Should Taste Good Blue Corn or Multigrain Tortilla Chips, as desired
Steps
- In 2-quart saucepan, heat cream cheese and beer over medium heat 8 to 10 minutes, stirring constantly with whisk, until cream cheese is completely melted.
- Stir in Cheddar and Monterey Jack cheeses a little at a time until melted and sauce is smooth, about 4 minutes.
- Stir in tomatoes, chipotles and green onions.
- Serve warm with chips.
