Ingredients
- 1/2 cup (about 2 oz.) finely crushed Food Should Taste Good Multigrain Tortilla Chips
- 1 cup lager beer
- 1 teaspoon olive oil
- 1 cup (about 4 oz.) finely chopped cremini or baby bella mushrooms
- 2 cloves garlic, finely chopped
- 1 lb lean (at least 80%) ground beef
- 1/4 cup chopped green onions
- 3/4 teaspoon salt
- 1/2 teaspoon Worcestershire sauce
- 1 egg
- 8 oz. cream cheese
- 2 cups (8 oz.) shredded Gruyere cheese
Steps
- Heat oven to 400°F.
- In small container, mix crushed chips and 1/4 cup of the beer; let stand until beer is absorbed, about 5 minutes.
- Meanwhile, lightly spray bottom and sides of foil-lined 15x10x1-inch pan with cooking spray.
- Heat 10-inch skillet over medium-high heat. Add oil and mushrooms; cook 5 to 6 minutes, stirring frequently, until mushrooms are lightly browned and tender.
- Add garlic; cook about 1 minute or until garlic is fragrant. Remove from heat; place in medium bowl.
- Add beef, chips mixture, green onions, salt, Worcestershire sauce and egg. Gently stir, taking care not to compress the mixture.
- Shape mixture into 1 1/4-inch balls (about 24); place in pan.
- Bake 18 to 22 minutes or until meat thermometer inserted in center of meatball reads 165°F.
- Meanwhile, in a 2-quart saucepan, cook cream cheese and remaining 3/4 cup beer over medium heat 6 to 7 minutes, stirring constantly with whisk, until completely melted.
- Stir in Gruyere cheese a little at a time until melted and sauce is smooth, about 4 minutes. Serve warm with meatballs and additional Food Should Taste Good Tortilla Chips..
