Ingredients
- 4 medium-sized sweet potatoes, peeled and diced into 2-inch cubes
- 5 tablespoons unsalted butter
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup milk (add more as needed)
- salt to taste
- 2/3 cup Food Should Taste Good Sweet Potato Tortilla Chips, crushed
- 1/3 cup chopped walnuts
- 1/2 cup mini marshmallows
Steps
- Add the sweet potatoes to a large pot. Fill with water so the potatoes are covered and put on the stove over medium high heat.
- Bring to a light boil and cook the potatoes for approximately 15-20 minutes, or until the potatoes are tender and can be broken up easily with a fork. Drain the water.
- Preheat oven to 350 degrees F.
- Pour the cooked potatoes into a large mixing bowl. Add the butter, brown sugar, cinnamon, salt, and the milk and use a hand mixer to mash the potatoes to desired consistency.
- Scoop the mixture into a pie dish or baking dish (or you can also use individual ramekins).
- In a small bowl, stir together the Food Should Taste Good Sweet Potato Tortilla Chips and walnuts.
- Sprinkle the chip and nut mixture evenly over the top of the sweet potatoes followed by the marshmallows.
- Bake uncovered in the oven for 15-20 minutes or until the potatoes are heated through and the marshmallows are browned.
