Crispy Sweet Potato Casserole

Ingredients

  • 4 medium-sized sweet potatoes, peeled and diced into 2-inch cubes
  • 5 tablespoons unsalted butter
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup milk (add more as needed)
  • salt to taste
  • 2/3 cup Food Should Taste Good Sweet Potato Tortilla Chips, crushed
  • 1/3 cup chopped walnuts
  • 1/2 cup mini marshmallows

Steps

  1. Add the sweet potatoes to a large pot. Fill with water so the potatoes are covered and put on the stove over medium high heat.
  2. Bring to a light boil and cook the potatoes for approximately 15-20 minutes, or until the potatoes are tender and can be broken up easily with a fork. Drain the water.
  3. Preheat oven to 350 degrees F.
  4. Pour the cooked potatoes into a large mixing bowl. Add the butter, brown sugar, cinnamon, salt, and the milk and use a hand mixer to mash the potatoes to desired consistency.
  5. Scoop the mixture into a pie dish or baking dish (or you can also use individual ramekins).
  6. In a small bowl, stir together the Food Should Taste Good Sweet Potato Tortilla Chips and walnuts.
  7. Sprinkle the chip and nut mixture evenly over the top of the sweet potatoes followed by the marshmallows.
  8. Bake uncovered in the oven for 15-20 minutes or until the potatoes are heated through and the marshmallows are browned.
