Tailgate Chili

Ingredients

  • 1 lb lean ground beef (at least 80%)
  • 2 large poblano chilies seeded, chopped (about 2 cups)
  • 1 medium jalapeno chile seeded, finely chopped
  • 1 large white onion chopped (about 2 cups)
  • 1/4 cup chili powder
  • 1 tsp ground cumin
  • 1/4 tsp ground red pepper (cayenne)
  • 1 1/2 tsp sea salt
  • 1 bottle (11 to 12 oz) stout beer
  • 1 can (28 oz) crushed fire roasted tomatoes undrained
  • 2 cans (15 oz) red kidney beans, drained, rinsed
  • Food Should Taste Good Blue Corn Tortilla Chips or Multigrain Tortilla Chips

Steps

  1. Heat 5-quart Dutch oven over medium heat.
  2. Add beef; cook 6 to 8 minutes, stirring occasionally, until brown.
  3. Remove beef, and drain.
  4. Add oil to Dutch oven; increase heat to medium-high. Add poblano and jalapeno chilies and white onion; cook 4 to 5 minutes, stirring occasionally, until vegetables just start to soften.
  5. Stir in chili powder, cumin, red pepper and salt, and stir 1 minute; add beer, and stir well.
  6. Stir in tomatoes, beans and beef. Heat to simmering; reduce heat to medium-low.
  7. Cover and simmer about 45 minutes, stirring occasionally, until slightly thickened.
  8. Serve warm with Food Should Taste Good Blue Corn or Multigrain Tortilla Chips, and your favorite toppings! We suggest: cheese, sour cream, green onions, diced tomato and sliced jalapeno as ideas!
NOTE: Any canned beans you have in your pantry, such as pinto, cannellini or black, can be substituted or used with red kidney beans in this recipe.
