Chicken Jalapeno Popper Baked Nachos

Ingredients

  • (2) 8 oz. packages cream cheese, softened
  • 1 cup mayonnaise
  • (1) 4 oz. can chopped green chilies, drained
  • 1 fresh jalapeno, seeded and chopped
  • 1 cup Mexican cheese blend, shredded, divided
  • 1 cup pepper jack cheese, shredded
  • ¼ cup Parmesan cheese grated
  • 3 cups cooked chicken breasts, chopped
  • 2 green onions, sliced thin
  • 1 fresh jalapeno, seeded and sliced
  • Food Should Taste Good Multigrain Tortilla Chips

Steps

  1. Pre-heat oven to 425°F
  2. In a large bowl using a hand mixer, blend together cream cheese, mayo, green chilies, jalapeno, ½ cup Mexican cheese, ½ cup pepper jack cheese and parmesan, until smooth and combined.
  3. Fold in chicken and mix well on low.
  4. Spread Multigrain Tortilla Chips evenly on two baking dishes or oven proof serving platters.
  5. Carefully pace spoonfuls of chicken jalapeno popper dip on top of chips.
  6. Spread remaining cheese, green onion and sliced jalapenos on top of chips.
  7. Bake 10 minutes until cheese is bubbly and chips are crispy.
