Black Bean Chili

Ingredients

2 large yellow onions, roughly chopped, 5 garlic cloves, roughly chopped, 2 tablespoons vegetable oil, 1 ½ tablespoons paprika, 1 ½ tablespoons cumin, 2, 28oz cans crushed tomatoes, 2, 15.5oz cans black beans, drained and rinsed, "¼ cup chipotle en adobo, Salt and pepper to taste.

Steps

1. Heat a heavy-bottomed pot on medium-high heat.

2. Add the onions, garlic and vegetable oil and cook until the onions begin to turn translucent, stirring frequently.

3. Add paprika and cumin and cook for an additional 5-7 minutes.

4. Reduce heat to medium-low, add crushed tomatoes and simmer for 15-20 minutes, stirring occasionally.

5. Add black beans, chipotle en adobo and season with salt and pepper, simmer for an additional 5-10 minutes.

6. Serve hot with Food Should Taste Good™ Blue Corn or Black Bean Tortilla Chips
