Beet Dip

 Ingredients

  • 4 medium beets
  • 3 large sweet potatoes
  • 1/3 cup olive oil
  • 1/3 cup coconut yogurt
  • 4 garlic cloves, minced
  • ¼ cup chopped tarragon
  • Juice of 2 medium lemons
  • Zest of 1 lemon
  • ½ tsp salt & pepper
  • ¼ tsp cumin

Steps

1. Preheat your oven to 425 F

2. Cube beets and sweet potatoes and toss together with 2 tbsp olive oil, salt & pepper to taste. Roast on a baking sheet until tender (about 55-65 minutes).

3. Once roasted, let cool completely. Add beets and sweet potatoes to a food processor with olive oil, coconut yogurt, garlic, tarragon, lemon zest, lemon juice, salt, pepper, and cumin until smooth.

4. Serve with Food Should Taste Good Multigrain Tortilla Chips. Enjoy!
